I am trying to get this part’s unmachined cast iron portion not to be shiny. Adding a label to the material node was what I was trying to do, but it wasn’t turning out well. Does anyone have any tips on how they would go about doing this?

You have to add some ‘roughness’ to metal material of this part. You can set it in metal properties directly or (better) use bump map with ‘color to number’ adjustment node to drive it linked with bump texture.
